Thai cuisine evolved in the Central region of Ayutthaya



Rice, vegetables, fresh water fish and flavoured with black pepper, garlic and fish sauce, along with an
abundance of fresh fruit and many traditional Thai sweets as dessert, was enjoyed as the main food of
Sukhothai.
Ayutthaya added other elements to the main ingredients. The now essential
fiery chilli pepper - was introduced at this time, along with the equally popular
coriander, lime and tomato.

The subtle mixing of herbs and spices and market-fresh ingredients makes
dining a special culinary experience seasoned to individual taste with several
condiments such as fish sauce, chilli peppers and sauces.
